The Yorokobi 210mm Gyuto is a high-end collaborative piece between Nigara Hamono and Hatsukokoro, built around an SLD semi-stainless core steel that delivers exceptional edge retention, impressive cutting performance, and far easier maintenance than most traditional carbon steels. Thin, aggressive through food, yet still confidence inspiring in hand, this is the kind of knife that immediately feels serious once it touches the board.
The blade features a darker greyish blasted finish flowing into deep Damascus layers with a contrasting textured bevel that gives the knife a very raw yet controlled appearance. The blasted surface softens reflections and adds a more industrial, almost stone-like character to the blade while still allowing the layered Damascus patterns to reveal themselves subtly under changing light. It feels handcrafted, unique, and far removed from the brighter polished look seen on many production Damascus knives.
This particular custom build was assembled at Kakushin onto a beautifully stabilized wood handle featuring soft greyish-brown tones paired with a lighter marbled buffalo horn ferrule. We specifically tried to match the natural movement and muted tones of the handle with the darker blasted character of the blade itself, creating a much more cohesive overall piece rather than simply pairing random components together. The result is a knife that feels elegant, balanced, and understated while still carrying the strong visual presence expected from a true handcrafted Japanese custom build.
