The Kagami Series ā handcrafted in Tosa, Japan ā with a refined polished Migaki finish and a beautifully textured Tsuchime Damascus pattern that creates incredible depth and contrast in person. The mirror-like polish catches the light while the hammered finish keeps that more traditional handcrafted character alive, giving the knife a premium look without feeling overly flashy or artificial.
Forged from VG10 stainless steel hardened to approximately 61 HRC, the Kagami series was designed to be a true high-performance daily driver. Thin behind the edge with excellent cutting feel, strong edge retention, and solid corrosion resistance, these knives deliver serious performance while remaining approachable and easy to maintain for everyday kitchen use.
One of the first things that stood out to us when these arrived was the overall finishing and cutting performance. Rounded spine edges, smoother choils, cleaner polish transitions, and noticeably better comfort in hand make them feel far more refined than many typical VG10 production knives. After testing them extensively at the shop on a wide range of ingredients, we came away genuinely impressed by how cleanly and effortlessly they move through food.
This particular piece was assembled at Kakushin onto a stunning blue and black fiberglass handle paired with a rich red epoxy ferrule, giving the knife a much bolder and more modern personality. The layered fiberglass creates incredible depth under light while the vivid red ferrule adds just enough contrast to make the entire build stand out without overpowering the blade itself. As a final touch, every blade is traditionally hand engraved with the Kakushin Kanji, adding a little more individuality and ensuring no two knives ever feel completely identical.
