The Hatsukokoro Kurozome 210mm Gyuto is one of those knives that immediately stands apart once you see it in person. The darker Kurozome finish gives the Damascus layers a deep smoky contrast that shifts under light, creating a blade that feels refined, aggressive, and highly detailed all at once.
This particular piece has been assembled here at the shop as a true 1 of 1 custom build, fitted with a beautifully figured Bubinga wood handle, paired to an epoxy ferrule and finished with a striking translucent tip. The warmer reddish-brown tones of the Bubinga flow naturally into the darker blade finish, while the translucent section adds a more modern custom touch without overpowering the knife visually.
Beyond the aesthetics, the Kurozome series is known for its excellent cutting performance. The grind is thin behind the edge with a very agile feel through ingredients, making the knife extremely smooth for detailed prep work, vegetables, herbs, and proteins alike. The stainless Damascus construction also keeps maintenance far easier than traditional reactive carbon steel while still delivering excellent sharpness and edge retention.
At 210mm, the Gyuto sits in that ideal middle ground for many cooks: large enough to comfortably handle bigger prep tasks and proteins, while still remaining nimble and balanced for everyday use.
