The Nigara Hamono STRIX series is crafted in Japan using high-performance powdered stainless steel designed specifically for cutting performance. Known for its extremely fine carbide structure, this steel delivers exceptional sharpness, excellent edge retention, and a very refined cutting feel on the board. Hardened to approximately 64 HRC, the STRIX series stands out for its impressive performance, thin geometry, and highly responsive feel through ingredients while still maintaining the practicality of stainless steel.
This particular piece has been custom assembled here at the shop as a true 1 of 1 build. Instead of the more traditional slimmer Japanese handle profile, this knife has been purposely fitted with a thicker and bulkier custom handle designed for users who prefer a fuller grip or simply have larger hands. The stabilized turquoise-colored wood creates a vibrant and highly distinctive appearance, while the epoxy ferrule adds depth and contrast that shifts subtly depending on lighting and angle. The larger handle profile also changes the overall feel of the knife in hand, giving it a more substantial and planted grip without losing the agility the STRIX series is known for.
Visually, the brighter turquoise tones pair surprisingly well against the darker blade finish and aggressive modern profile of the STRIX line, creating a knife that feels both bold and highly custom without becoming excessive.
Combining premium powdered steel performance, Nigara Hamono craftsmanship, and a fully custom ergonomic handle configuration, this build offers a unique balance between cutting performance, comfort, and standout character.

Petty knives are a mix between slicing and paring knives known as the ideal blade for most food preparations that require added precision. They feature scalloped edges and blades that are slightly longer than standard paring knives. Heavily used by chefs for their sharp edges, the petty is very efficient for slicing fruits, vegetables, meats or poultry and even mincing garlic, onions and delicate herbs.
