We built a custom āHis & Hersā duo pairing featuring the Bunka 170mm and Kiritsuke 240mm. Designed around couple cooking, the concept behind the set is simple: two knives that complement each other naturally in the kitchen while offering very different feels and strengths.
The 240mm Kiritsuke acts as the larger āHisā model ā ideal for bigger prep tasks, larger hands, proteins, and high-volume cutting. The extra blade length gives more draw during slicing while the longer profile feels extremely efficient on larger ingredients and meat preparation. Despite its size, the ultra-thin geometry keeps it feeling surprisingly agile and smooth through food.
The 170mm Bunka takes the role of the smaller, more nimble āHersā option ā compact, fast, and highly precise. Its shorter length makes it feel incredibly maneuverable for detailed prep work, vegetables, herbs, garlic, shallots, and tighter board work where control matters more than reach.
Together, the pairing creates a setup where both users naturally gravitate toward the knife that fits their style, hand size, and workflow best ā while still sharing the exact same steel, grind philosophy, and craftsmanship.
Like many Hatsukokoro projects, these knives are the result of collaboration between some of Japanās most respected blacksmiths, sharpeners, and craftsmen. By combining the expertise of multiple artisans under one vision, Hatsukokoro consistently produces knives with exceptional grind quality, heat treatment, and finishing ā often rivaling blades priced far higher.
This duo comes from the Ryuhyo Migaki collection, handcrafted in Echizen with an elegant polished Migaki Damascus Suminagashi finish. The mirror polish can be difficult to fully capture in photos, sometimes appearing darker or more muted than it really is, but in person the blades reveal a refined near mirror-like surface where the layered Damascus patterns subtly shift and emerge as light moves across them. The look is clean, sophisticated, and understated rather than overly flashy.
Even more impressive, Yauji handles every major step of production himself ā from forging and grinding to final finishing and sharpening ā allowing for an exceptional level of consistency and craftsmanship throughout the entire process.
Performance-wise, both knives feature an SG2 (R2) powdered steel core hardened to approximately 63 HRC. This delivers outstanding edge retention, excellent long-term sharpness, and a very refined cutting feel. Combined with the ultra-thin ālaserā geometry of the Ryuhyo line, the result is an incredibly smooth, low-resistance cutting experience that feels precise, effortless, and highly responsive on the board.
