Hand-forged in Shimabara City, Nagasaki Prefecture, this Gyuto comes from the workshop of Yosimitu Kajiya, a third-generation blacksmith still forging blades one at a time using traditional Japanese methods. With over 84 years of accumulated family experience behind the forge, the focus remains on cutting performance, heat treatment, geometry, and balance rather than mass-production perfection.
This particular knife has been fully assembled here at the shop as a true 1 of 1 custom piece. The blade has been paired with a rich walnut handle featuring a translucent epoxy tip with mountain and volcano-inspired detailing inside, creating a handle that feels both natural and highly unique without overpowering the raw forged character of the blade itself. The darker walnut tones flow beautifully into the kurouchi-style finish while the translucent section adds depth and a more modern custom touch.
Like many true handmade Japanese knives, this Gyuto carries visible forge character, subtle irregularities, and the small details that come from real hammer-and-anvil work rather than automated production. These are not flaws, but part of what makes each knife individual. The result feels far more alive and authentic than overly sterile factory finishes.
The Gyuto remains one of the most versatile knife shapes available and is often considered the ultimate all-purpose kitchen knife.
