Each knife is completely hand-forged for our shop in Tosa by a fourth-generation workshop with roots going back to 1920. What started with agricultural tools has evolved into a focused pursuit of kitchen knives, where geometry, taper, and balance are dialed in with intent. The result is a blade that moves cleanly through food, with a grind that supports both precision and everyday versatility. It’s not about overengineering — it’s about getting the fundamentals right.

This 210mm Gyuto was assembled at Kakushin onto a truly eye-catching custom handle pairing warm olive wood with a deep black ferrule and a translucent blue resin tip containing floral elements suspended inside. As light passes through the resin, the handle reveals layers of depth and detail that give the knife an almost floating effect in hand. The natural warmth of the olive wood balances beautifully against the darker accents and vibrant blue tones, creating a piece that feels both elegant and bold without overpowering the rugged character of the forged blade. The result is a completely unique Gyuto with an artistic expression into a knife meant to be used, admired, and kept for years.
